Rosemary & Garlic Roasted Potatoes and Parsnips
For winter warmers you can’t get much better than tasty roasted vegetables. Whether you are a vegetarian, vegan or meat eater, roasted veg taste so good on a cold winter weekend.
Garlic and Rosemary offers an extra zing and delicious flavour for this easy to make dish for November.
This recipe combines the natural sweetness of parsnips with classic savory potato roasting methods.
Ingredients
- 2 lbs (about 1 kg) potatoes peeled and cut into even chunks
- 1.5 lbs (about 6-8 medium) parsnips, peeled and cut into similar-sized chunks
- 1 bulb of garlic, broken into individual cloves (peeled or unpeeled, as preferred)
- 3-4 sprigs of fresh rosemary, leaves picked off the stalks
- 3-4 tbsp olive oil
- Sea salt and freshly ground black pepper to taste
Instructions
Preheat Oven: Heat your oven to 400°F (200°C / Gas Mark 6).
Drain and “Fluff”: Drain the vegetables thoroughly in a colander and let them steam dry for a few minutes. Give the colander a gentle shake to roughen up the edges of the potatoes, which helps them crisp up.
Prepare Roasting Pan: Add the olive oil to a large roasting pan and place it in the preheated oven for 5 minutes to get the oil hot.
Season and Roast: Carefully remove the hot pan from the oven. Add the drained vegetables, garlic cloves, and rosemary leaves. Season generously with salt and pepper. Toss everything well to ensure the vegetables are coated in the oil and seasonings.
Cook: Spread the vegetables in a single layer in the pan. Roast for 40-45 minutes, or until golden brown and crispy on the outside and tender on the inside, stirring them at least once halfway through for even cooking.
Serve: Scoop the roasted vegetables into a warm serving dish and serve immediately.
Top Tips
- Ensure the cut of the potatoes are all the same size so they cook evenly.
- We have just discovered olive oil spray to coat the potatoes, but you can just drizzle olive oil evenly over the potatoes
- Stir the veg so they veg do not stick and get evenly cooked
- Serve immediately and ensure they are soft of inside and crispy on the outside.
