Agretti also known as Monk’s Beard, Roscano or Salsola Soda. can be described like a cross between spinach and samphire. It’s well worth tasting while you can. It’s easy to cook; trim off the roots, give it a good wash and then sauté in olive oil for a few minutes so it still has a bit of bite. If you like, finish it off with a squeeze of lemon.
